    I just watched the 4 part documentary based on Michael Pollan’s book Cooked. Part 4 is about fermentation. To make chocolate, in the movie the beans were released from the pods and put into plastic buckets. These were a mixed collection of any old type of 5 gal buckets. Could these be not food safe? And maybe get old and leach toxins? Also after the beans ferment to a certain temperature in large wood vats they are spread to dry on concrete. Does concrete contain toxins? I do not recall the country of bean production in the movie; however in Bali I have had a tour of a small production facility and there they ferment the beans on concrete under banana leaves.
    The chart above needs to identify the country of origin for each brand of chocolate listed.

    this chart needs to state a few more facts, so far I’ve seen not a single proof to these claims, that would be a great start

    There is a difference in absorption of organic bound metals and free metals so I’m hoping this may mitigate some of the problem. Is there any information available on this?
