      Mary,
I did a little research and found this. It gives you some history on the Manuka Honey Industry in New Zealand and the definitions of UMF, the registered trademark of their honey.

I read that all honey imported to the US mostly comes from China and is FILTERED to remove the pollens that would identify where it is collected.
Without the pollen, the honey is useless to prevent infections and is nothing more than liquid sugar although it may have some good properties.
You need honey that is UNFILTERED and UNPASTEURIZED to get the full benefits of it as both a food source and a medicinal tool. AND you need to buy honey that is produced LOCALLY in your living area to give you some benefits against seasonal allergies. It’s the local pollens that you may be allergic to and the local honey may provide you with some immunity when ingested.
